Jaggery (also called gurh or Gur) is a concentrated product of cane juice without separation of the molasses and crystals. The colour varies from golden brown to dark brown. It is an easily available sweet which is shared on any good occasion.
Jaggery is used as an ingredient in sweet and savoury dishes in the cuisines like Payasam, panagam, Poli, kozukkatai, etc.? A pinch of it is sometimes added to sambar, rasam, lentil soups (dal) and other staples to add sweetness to balance the spicy, salty and sour components. It is used exclusively as a sweetener in chakkarai pongal. The combination of crushed jaggery with ghee is excellent and goes well with chapathi. Other uses include jaggery-toffees and jaggery-cakes made with pumpkin preserve, cashew nuts, peanuts and spices.
